Best Ever Dark Chocolate Brownies

Because there is nothing more comforting than warm, rich chocolate.

Every once in a while, my mom goes on a diet.

I get it. She wants to feel stronger, more energetic, healthier. I think it’s great. But I also know there’s one sure fire way to derail it.

Warm, slightly , chocolately brownies are the destroyer of diets everywhere, and for a good reason! They are SO delicious, SO rich, and they are my family’s favorite dessert!


Here is our recipe… it’s extra dark, so it’s extra yummy!

Ingredients:

  • 1 1/2 cups sugar
  • 3/4 cup Hershey’s Special Dark Cocoa
  • 2/3 cups all purpose flour
  • 1/2 cup confectioner’s sugar
  • 1/2 cup 60% dark chocolate chips (I like Ghirardelli)
  • 3/4 tsp salt
  • 2 eggs
  • 1/2 cup olive oil (you can use vegetable oil but I like olive)
  • 2 tbsp water
  • 1/2 tsp vanilla

Instructions:

Preheat the oven to 325 degrees, and while it’s heating, grease an 8×8″ pan with shortening and line it with parchment paper.

In a large bowl, mix the flour, cocoa, and confectioner’s sugar. Add in salt, and set aside.

In a medium bowl, mix sugar, eggs, oil, water, and vanilla. Add this to the dry mix, and beat thoroughly. Fold in chocolate chips.

Bake at 325 for 45 minutes, or until a toothpick comes out clean.. or in my case, mostly clean. I like mine a little fudgy. I also like mine nice and warm, but be aware that when you cut the brownies while they’re hot, they’re going to get totally shredded. If you want it clean cut, you have to wait for them to cool.
