“Peeps” Crispy Rice Treats

When you got more peeps than you can handle
Let’s face it… some of us don’t like peeps.
I know parents mean well, with the sugar coated marshmallow chicks stuffed in our Easter baskets. My mom says when she was young, they only came in one color: yellow. She was so excited when they started making pink and then blue ones. Now, when I see them at the store, they are in all kinds of weird flavors! Chocolate, Watermelon, even Red Hot!! I don’t think I’d want to try those in this recipe, but for those of you who, like me, are not really into the fluffy weirdness, at last there is something you can do with these excess marshmallow chicks.
These rice cereal treats are as yummy as they are pretty, and everyone is going to love them, especially when you tell them what they’re made of!

- Cooking spray
- 8 Cups Crispy Rice Cereal
- 4 10-Count Packages of Peeps, One each of Pink, Yellow, Blue, and Green
- 6 Tbsp Butter
- Pink, Yellow, Blue, and Green Food Coloring
Spray an 8×8 baking dish with cooking spray, and line with parchment paper on bottom and sides.
In a microwave safe bowl, combine 10 peeps of one color, and 1 1/2 Tbsp butter. Heat in 30 second intervals until the peeps are expanded and melted. Stir together, and mix in 2 cups of rice cereal. If desired, while still hot, add a few drops of food coloring to brighten color.
Press mixture into the bottom of the pan, then set aside. Repeat with all colors, layering one by one in the pan.
Cover, and refrigerate 1 hour.
At this point, you can divide them into squares, or use a cookie cutter to cut out shapes. I like this method… because I can eat the excess! 🙂
