Sugar Free (or not) Mocha Mousse

So easy, I’m ashamed to tell you about it!


Sometimes, you have a secret recipe, and it’s secret for a very good reason… it’s too EASY. When I am in a pinch for time, and I need a good cake filling, this is my go-to. And the best thing about it is that it can be made TOTALLY sugar free! I use this on my scrumptious sugar-free chocolate cupcakes, and I am here to tell you, it doesn’t feel like you’re missing out on anything. I have some friends who are diabetic, and they swear by them. So.. despite the risk to my culinary reputation… here it is, you guys. My 3 ingredient recipe for mocha mousse. Enjoy!


Ingredients:


  • 2 Cups Heavy Cream
  • 1 Small Box Sugar Free or Regular Instant Chocolate Pudding
  • 2 Packets Instant Coffee


Instructions:


Beat the heavy cream on low, adding in pudding a little at a time until fully incorporated. Add the coffee, then beat on high until mixture thickens to a heavy, custard-y texture.

See? I told you it was easy.

This is DYNAMITE as a cake filling, but can be used for frosting as well. Be sure to keep it covered, though, as it will film over if it dries out. Also, keep refrigerated due to the cream base.

That’s it! Don’t judge me.. and kids, this one is SO easy, you guys can TOTALLY make it! Try it with vanilla pudding, too!!
