Pina Colada Glaze

My absolute all time favorite!
This glaze is just DISGUSTINGLY good. I mean it. My tropical cocktail inspired donuts are some of my favorite things in the world, because they combine two of my favorite things… fluffy cake donuts and summer! But of all 3 cocktail glazes, which you can find HERE and HERE, I think this one is the best. I have a passion for anything coconut and pineapple, and I pretty much spend all summer long chasing down my next virgin Pina Colada!
This glaze is perfect on cookies, would be spectacular on a coconut bundt cake, and of course, is amazing on a donut. Top it with shaved coconut and candied pineapple, and you can sit back, soak up some rays, and enjoy!
- 1 cup Powdered Sugar
- 1 tbsp Light Corn Syrup
- 1 tbsp Pineapple Coconut Juice
- 1 tsp milk
- 1/2 tsp Coconut Extract
Using a wire whisk, mix all ingredients together. The glaze should be thick enough to coat a spoon, but thin enough to dip donuts in. If needed, add more powdered sugar for additional thickness, or more milk for thinning.
TIP: Before the glaze hardens, sprinkle some shaved coconut on for amazing flavor and texture!
